Position: Research-Extension Instructor/Associate in Meat Science Location: COA, Environment & Nutrition Sciences/Extension/GWCAES
Status: Full-Time, Exempt

Essential Job Duties and Responsibilities
Conduct innovative research on the chemical and microbiological stability of meat and meat products. This research group has a special interest in beef, chevon, and associated product development.
Prepare a detailed plan of operation for the TU Red Meat Processing Facility to include project activities and implement said plan accordingly.
Monitor and guide graduate and undergraduate students and project-related staff.
Collect and analyze research and extension data, and prepare manuscripts for journals and extension publications, such as fact sheets, research highlights, bulletins, and technotes.
Coordinate day-to-day research and extension activities of the facility: planning, implementation, monitoring, and evaluation.
Plan, advertise and organize training sessions, workshops, and field days.
Collect and compile daily accomplishments and prepare monthly, quarterly, and annual progress reports.
Perform quarterly, annual, and final impact assessments/evaluations of the project in a timely manner.
Prepare a comprehensive final report of the project.
Participate in relevant meetings, seminars, and conferences, and present the project results and outcomes as necessary.

Ability to conduct impact assessments and prepare progress reports
Carry out other relevant activities as directed by the Dean, Associate Deans, and Department Head.
Graduated with a Ph.D. in the area of animal sciences, meat sciences, food sciences, or their equivalents.
Certification(s) in food safety training, including but not limited to 1) SPCA Preventative Controls for Animal and Hazard Analysis and Critical Control Points (HACCP)
A strong background in meat science and product development to include that associated with red meat animals, particularly goats and/or cattle
Knowledgeable of red meat processing facilities
Experience with the development of research dissemination programs
Extensive experience in evaluating antimicrobials to determine their effect on microbes in commercial meat products.
Experienced with inoculation techniques of microbes onto meat products while maintaining aseptic conditions in compliance with federal regulations.
Able to isolate and maintain cultures to perform microbial confirmation procedures.
Ability to work with faculty, staff, students, and other stakeholders
Ability to work with stakeholders, particularly those of the Red Meat Processing Facility, including, but not limited to producers, county staff, etc.
Ability to solve problems and make decisions independently.
Demonstrate the ability to work independently with little supervision and a good team player.
Excellent communication (both oral and written) and interpersonal skills.
Skills in using Microsoft Office (Excel, Word, PowerPoint, Publisher) and data analysis packages as well as those related to the field of meat science and technology.
Experience in organizing training, seminars, workshops, meetings, and/or field days.
Commensurate with education, training, and experience. Position is contingent on outsde funding.
Additional Position Information:
This position will require you to travel for conferences.
